More adventures in healthy eating

I am inspired by this healthy eating kick. So I went to Trader Joes and bought:

– avocado
– sea salt
– refried beans
– organic spinach
– organic low fat yogurt.

I have a half-baked idea that I will blend all of these items together to make a healthy something.

avocado

1. Avocado.

Avocado has good fat. Okay, so it is much better for me than potato chips.

2. Sea salt.
Sea salt. Well, salt is salt is salt, but sea salt sounds so much healthier, doesn’t it?

trader joes refried beans
3. Refried beans.

In spite of the name, these beans have never been near a frying pan. They have 0 grams of fat and 7 grams of fiber. They will fill me up better than potato chips.

4. Organic baby spinach.

If I’m going healthy, I may as well go all the way. Also, at Trader Joes, the Organic Spinach is the same price as Regular Spinach. This is the real reason I bought organic.

5. Organic plain low fat yogurt.

I think this will give protein and a creamy texture to my mix. We’ll see.

Now what do I do with this mix?

DAY 1 UPDATE
I mixed this with my shrimp and it was yummy. Plus, it was filling, so I wasn’t reaching for the potato chips later in the afternoon.

DAY 2 UPDATE

I mixed this with my scrambled egg whites + 1 cage free egg. All I can say is “yuck” and back to the drawing board.
