Mr. Ken spent last week visiting his mother in South Carolina. Can we say grits anyone? Grits on their own wouldn’t be so bad; they’d probably be bland. But southern style grits call for the butter!
He would call me every night to tell me about his day.
Here’s an excerpt from one of our conversations:
Mr. Ken: “I had a good dinner tonight. It was pot roast and mashed potatoes.”
Me: “That sounds pretty good.”
Mr. Ken: “Well, you know Southern cooking is rather rich.”
Me: “Exactly what do you mean?
Mr. Ken: “Well, the pot roast tasted like bacon. I think it was deep fried in bacon grease or something. And the mashed potatoes had lots of cheese in them.”
Me: “Oh, that’s nice.”
Meanwhile, I’m thinking to myself, “It’s time I started making some healthy recipes so Mr. Ken can get back on track.”
So, I set out to make an Avocado Chickpea salad. I figured I would just feed it to Mr. Ken and not tell him what was in it. Maybe he would be fooled and think it was potato salad.
Here’s the result of my little experiment:
Needless to say, the experiment was not a success. Mr. Ken is much happier eating a donut:
You would think after the first healthy eating adventure, Mr. Ken would have learned his lesson. I guess not.

A big thank you to dear Mr. Ken for being such a good sport about everything. Although, I think now he rather enjoys his “15 minutes of fame.” I used to be able to threaten him with, “Be carefeul what you do, you may just end up as the subject of my next blog post!” Now, he is asking me when he will be featured again. 🙂

Mr. Ken is slowly becoming a WP icon! Yes, cheese in mashed potato’s seems to be a standard here.. Cheese on grits. That had to be a bit of a culture shock then for Mr. Ken to go from a fat based cuisine to healthy, bird feed cuisine. And Nancy, there is no substitute for a donut! No cheese necessary! Maybe try breaking one up and putting it over a bed of romaine?

Hi Andy,
Good idea about the donuts on top of lettuce. Except I think Mr. Ken would very carefully pick around the lettuce and eat all the donut!

Actually, I think grits would work quite well on icy roads. Anyway, grits are kind of like oat bran. I can see why folks wouldn’t want to eat them plain, since they don’t have much taste.

For the record my southern pot roast meal was pretty good overall and not much was left on the plate. I did find this pot roast version extremely rich though. Living with a “health nut”, I was aware that even though each forkful tasted good I was not doing my body any good. I’m glad I didn’t have a cholesterol test scheduled for this week! From now on I guess I will have to go on a lettuce diet the week before I go south in order to balance things out! 🙂

Hah – good question. I would have to say that I probably am not very good at icing donuts. A few years ago, I baked a birthday cake for a friend. I used one of those little icing tubes to decorate the cake. Let’s just say the icing decorations were quite interesting and leave it at that.

I think the chickpea avocado salad sounds delicious. But I also love grits. With lots of butter AND cheese. I’m not a huge fan of bacon fat, but some kind of pork finds its way into every Southern dish. I think it’s the law.

I must admit, the grits with butter doesn’t sound too bad. After all, I have to put lots of sugar in my oatmeal to disguise the flavor. As for the pork and fat, it must be some kind of Southern law, like you said. 🙂
