I am inspired by this healthy eating kick. So I went to Trader Joes and bought:
– avocado
– sea salt
– refried beans
– organic spinach
– organic low fat yogurt.
I have a half-baked idea that I will blend all of these items together to make a healthy something.
1. Avocado.
Avocado has good fat. Okay, so it is much better for me than potato chips.
2. Sea salt.
Sea salt. Well, salt is salt is salt, but sea salt sounds so much healthier, doesn’t it?
3. Refried beans.
In spite of the name, these beans have never been near a frying pan. They have 0 grams of fat and 7 grams of fiber. They will fill me up better than potato chips.
4. Organic baby spinach.
If I’m going healthy, I may as well go all the way. Also, at Trader Joes, the Organic Spinach is the same price as Regular Spinach. This is the real reason I bought organic.
5. Organic plain low fat yogurt.
I think this will give protein and a creamy texture to my mix. We’ll see.
Now what do I do with this mix?
DAY 1 UPDATE
I mixed this with my shrimp and it was yummy. Plus, it was filling, so I wasn’t reaching for the potato chips later in the afternoon.
DAY 2 UPDATE
I mixed this with my scrambled egg whites + 1 cage free egg. All I can say is “yuck” and back to the drawing board.

It all sounds good – I’m with you on organic, especially when it’s not so expensive, though you can’t put a price on wellness. We substitute kale for spinach, cause it reseeds itself and grows like a weed here. It’s become a staple. great post, Nancy. Thanks for the reminder to eat healthy.

Kale is also one of my staples. I don’t care for the taste, but I “hide” it in my scrambled egg whites and therefore I can’t taste it. I think that kale is packed with even more nutrients than spinach.

I think sea salt seasons better than regular salt hence you need less. I think the refried beans are going to be the biggest challenge. Good luck!

Nancy, I’m an avocado person too and as you mention eggs, I wonder if you’ve ever tried baking an egg in the gap left when you remove the avocado stone. (You may need to remove a little bit more of the avocado to fit a large egg in. Sprinkled with a little black pepper, it’s very tasty and only takes a few minutes in the Oven at about 180 degrees. Depends how well done you like the egg!

Nancy, I think it is awesome you are looking into healthy foods. There is much to know. Some people who begin to learn about this, end up spending way to much money trying to buy everything organic and thinking they need to make special trips to Heathfood Stores. In fact supermarkets, like Publix for example, have many healthy organic foods and things like seasalt. Btw, you might want to try Himalayan salt. It’s pink and it’s really good for ya! I sometimes buy organic avocados and mix it with organic salsa that tastes great and it’s simple to make.

Thanks for the tip on Himalayan salt, I think I’ve seen this at my local Trader Joe’s. Pink is my favorite color, so I am excited to try this! Alas, Trader Joe’s no longer carries a favorite of mine, South African Barbecue Seasoning, so this may be just the thing to replace it.
You make a very good point about people overthinking this healthy eating thing. I try to keep things fairly simple and try not to eat any processed food. All this takes is a little bit of planning. I go to a lot of conferences and I always plan ahead, bringing my healthy snacks like fruit and nuts. This makes it easier for me to resist the cookies and stuff that are invariably served at these events.

Being vegan, I never have to worry about cakes and cookies that are all around me too. When I think about what’s in that stuff, it turns me off from it anyway. I like feeling good as I’m getting older (63 now), and I want to feel even better. Btw, if I can’t find something I want, to eat or they no longer carry something, I look things up and keep trying to make it myself until it’s right. I never liked cooking until I starting eating healthy. Now everything tastes really good…too good sometimes. Teehee

I also find that if I eat very healthy, I feel so much better. On those few days that I eat some processed food, I feel really sluggish and bloated for the new few days. Live and learn.
